Cépage is the new version of the farm’s sparkling wine.
Bottle fermentation occurs according to long “Charmat” method obtaining therefore a Sparkling Wine with a bouquet of great elegance, with hints of yeast and reminiscences of fermentation. It has dry and very savoury flavour and is characterised by a pleasant fragrance and a long persistence of taste and scent.
It is the ideal companion for every moment of a meal: excellent as an aperitif, it is recommended also in combination with Eastern cuisine and pastry based dished.
It should be served cool, at a temperature of 6-8°C
PRODUCTION DETAILS
Wine achieved thanks to a particular stump of Turbiana grapes, with a production of 10,500 kilos of grapes per hectare.
VINE TRAINING SYSTEM
Guyot, double but short modified.
Plant-density: 3,600 vines per hectare
HARVEST
First ten days of September.
VINIFICATION
In stainless steel tanks at controlled temperature, 16 – 18 °C. Bottle fermentation occurs by means of a slow second fermentation of about five months in low pressure steel tanks, following long Charmat method.

At least 4 months in the bottle.
